    Tony's Super-Fast Stir-Fry Chop Suey

    List of Ingredients




    1 tablespoon olive oil

    1 tablespoon water

    4 hearts of baby bok choy

    1 cup bean sprouts

    1/2 cup celery, chopped

    1 1/2 medium bell pepper, chopped

    1/2 cup mushrooms, sliced

    1/4 cup snow peas

    1/2 cup onion, chopped

    5 ounces skinless chicken breast, cut into strips

    In a hot wok or large frying pan coated with Pam, stir-fry the above ingredients in 1 tablespoon olive oil.

    During the last 30 seconds add 2 tablespoons soy sauce and 1/2 cup steamed slow-cooked white or brown rice.

    Serves 2-3.
