    Trisha Yearwood’s Three Bread Dressing

    List of Ingredients




    1 pound cornbread (recipe follows)
    1/2 pound toasted bread crumbs (make your own from 1/2 loaf of white bread cut into 1/2-inch cubes and toasted slow in oven until lightly browned)
    1/4 pound saltine crackers
    1/2 medium onion, finely chopped
    3 eggs, boiled and chopped
    1-1 1/2 quarts broth saved from baking turkey or hen (skim fat)
    salt and pepper to taste

    Saute onions in 2 tablespoons of fat until clear. Don't brown. In a very large container (gallon or larger), crumble breads and crackers, add onions and eggs. Toss and add broth until mixture is well-moistened. Clean hands make great mixers! Add salt and pepper to taste. Place in a 9"x13" baking pan that has been sprayed with non-stick baking spray. Bake 15 minutes at 450 degrees until lightly browned. Cornbread: 3 cups self-rising buttermilk cornbread mix, 2 tablespoons melted butter or bacon drippings, 2-3 cups buttermilk (enough to make a thick batter) Mix all ingredients. Pour into well-greased 10" iron skillet. Bake at 450 degrees until well browned, about 20 minutes. The browned crust adds flavor to the dressing.
