    1 lb. coarse ground beef
    1 lb. diced beef
    1 lb. Crawfish tails
    2 15oz. cans of kidney beans
    4 8oz cans of tomato sauce
    1 yellow onion, chopped
    Sour cream
    Shredded cheddar cheese

    2 12 packs or one case of your favorite beer
    Carrol Shelby's Chili pack (if you don't have this stuff in your part of the country, you need to get it. It's the best. Or move.)

    Brown the beef, drain the fat. Drink a beer. Stir in one can of beer, onion, tomato sauce, chili powder, and all other seasonings from pack (do NOT stir in the Mesa corn flour. Add this at the very end, and only if the chili needs thickening). Bring to a boil, stirring regularly, then reduce to simmer. Go watch the game on TV, and drink another beer. Stir regularly. Approx. 35-40 minutes is fine.

    Stir in the beans, and go back to the couch for some more football. Drink another beer. Stir regularly for another 20 minutes. Add crawfish tails. Cook for another 8-10 minutes. You have just enough time for another beer. Serve in nice sized bowls. Add a dollop of sour cream and a little cheddar on top and stir in. Allow a few minutes to cool. Drink another beer while waiting. Hopefully the Saints are winning. But if they're losing, which is quite common, you won't care less. Oh yeah, the chili's pretty good too.
