    6 pounds round steak, coarsely ground, diced or cubed

    1 cup olive oil

    1 3-ounce bottle chili powder (Grandma’s brand preferred)

    6 tablespoons cumin

    6 small cloves garlic, minced

    2 medium red onions, chopped

    6 dried chili pods, stemmed, seeded and boiled 30 minutes in water

    1 tablespoon oregano

    2 tablespoons paprika

    2 tablespoons red wine vinegar

    3 cups beef broth (if not using canned, make broth with beer, not water)

    1 4-ounce can diced green chilies (Ortega brand preferred)

    1/2 of a 141/2-ounce can stewed tomatoes

    Dash of Tabasco sauce or more, to taste

    Brown meat in olive oil, drain and add chili powder, cumin, garlic and
    onions. Cook 30 to 45 minutes using as little liquid as possible; add
    water or beer only as necessary. Stir often.

    Remove skins from boiled pods, mash pulp and add to meat mixture. Add
    oregano, paprika, vinegar, beef broth, green chilies, stewed tomatoes
    and Tabasco sauce. Simmer 30 to 45 minutes. Stir often. Serve with high
    quality fresh bread. Makes 8 to 12 servings
