    5 lbs. very lean top round beef, cut into 3/4" cubes
    1/3 cup sesame oil (or peanut or corn oil)
    1/2 cup all-purpose flour
    2/3 cup chili powder
    1/4 cup chopped garlic
    2 tsp. whole cumin (or 1.5 tsp dried, powdered cumin)
    2 tsp. dried oregano
    1/4 tsp. cayenne pepper
    1/2 cup beef broth
    1/2 cup water
    4 tsp. red wine vinegar (or cider vinegar)
    salt & pepper

    Brown meat in oil. Stir in flour, chili powder, garlic, cumin,
    oregano, and cayenne pepper. Add beef broth (if you don't have beef
    broth, dissolve one beef bouillon cube in one cup water), water, and
    vinegar and bring to a boil. Add salt and pepper to taste. Reduce
    heat and simmer for 1.5 hours or until meat is tender. Stir
    occasionally to keep from sticking. When chili develops sharp taste,
    or 'bite' to it, add the secret ingredient: chocolate! Add one ounce
    baking chocolate and continue simmering until done. You can add
    other optional items like one can of stewed tomatoes and/or a can of
    red kidney beans. I also like to add one cup of chopped onions.
