    List of Ingredients




    # 1 medium onion, chopped
    # 1 medium bell pepper, chopped
    # 1-1/2 pounds boneless, skinless chicken breast,
    # diced into bite-sized pieces
    # 2 cans diced tomatoes and green chilies, undrained
    # 1 can pinto beans, undrained
    # 1 can kidney beans, undrained
    # 1 can enchilada sauce

    Sour cream, cilantro, cheddar cheese, and/or avocado for garnish

    Spray large pan with cooking spray. Cook onion and peppers for several minutes until tender. Add all other ingredients except garnish. Cover and cook over low heat for 3-4 hours (may cook for longer if desired).

    Chili can also be cooked in a slow cooker. Add all ingredients except garnish to slow cooker. Stir; cover and cook on low heat for 7-8 hours.

    Stir mixture to blend evenly. Top each with garnish of choice. Enjoy!
