    * 4 lbs. Beef chuck steak (partially freeze this meat and then cut it into small chunks, suitable for chewing. Partially freezing meat before cutting makes it much easier to cut.)
    * 1/3 cup lard ( you can use veggie shortening instead if you're afraid of that cholesterol.)
    * three cloves fresh garlic (mmm..)
    * a big giant onion, chopped
    * 1 cup drained and rinsed canned Nopalitos " HUH?" What's Nopalitos? Nopalitos are cactus pieces, with the thorns lovingly taken off, of course. Sometimes I find these at Walmart Super Stores. If you can't find them anywhere, you can used cooked green, yellow and red bell pepper strips, but believe me, it won't be the same.
    * Green, red and yellow bell pepper strips, about 1 ½ cups thinly sliced into long strips and cooked briefly. Add these in addition to the Nopalitos.
    * Lots of canned Serrano Peppers, seeded and chopped
    * Lots of Jalapeno Peppers (add to taste)
    * 3 cups of fresh green Tomatillos , cut up. "HUH?" What's Tomatillos? No, they are NOT little tomatoes. They are a Mexican green tomato that has a papery husk on the outside. It kind of looks like a grass skirt. Take the skirts off and rinse well.
    * 12 oz. tomato paste
    * 3 cups beef stock or canned beef broth
    * 1 ½ teaspoons ground coriander
    * 5 teaspoons ground cumin
    * 1 ½ teaspoons salt
    * ½ teaspoon black pepper
    * several tablespoons chili powder
    * ½ cup masa harina "Masa what?" It's similar to corn meal, but finer.
    * ½ cup water
    * several cans dark red kidney beans

    Heat the lard in a large kettle, adding meat about one pound at a time, removing after each pound is browned. After all meat is browned, put onions and garlic in kettle and cook until soft. Return all beef to kettle.

    Rinse cactus pieces in cold water and drain. Add to beef. Also add green peppers, Serrano peppers and Jalapeno peppers, tomatillos, tomato paste, beef stock, coriander, cumin, salt, pepper, and chili powder. Cover and simmer about 2 ½ hours.

    About one hour before chili is done, add beans. Mix masa harina with cold water and gradually add to pot a tiny bit at a time. It will ball up if you add it in large amounts. Stir well. Allow to cook some more. During the course of cooking, you may add additional peppers, spices, etc. to your liking. The longer it cooks the better it gets and it's usually better the following day.
