    KITTENCAL

    This is easy to put together and it is very good, and even easier if you have freezer-ready ground beef! You can even make this with ground chicken or turkey. The amounts listed are only a guideline, you can increase or cut down ingredients to suit taste. Serve in bowls, topped with cheddar cheese and/or sour cream and onions and a crusty roll on the side. I really do suggest to make this a day ahead and refrigerate, it takes on a whole different taste the following day. The complete recipe can be doubled.
    5-6 servings

    List of Ingredients




    1 lb lean ground beef
    1 onion, chopped
    seasoning salt or salt and pepper
    1 tablespoon minced fresh garlic
    1 small green pepper (optional)
    jalapeno peppers, chopped (optional, add in if you like spicy)
    3 cups tomato juice (or 2-1/2 cups tomato sauce with 1/2 cup water)
    1 (12 ounce) jar thick & chunky salsa (1-1/2 cups)
    1 (15 ounce) can red kidney beans (or to taste)
    1 (14 ounce) can diced tomatoes (with juice)
    1 (10 3/4 ounce) can tomato soup, undiluted
    chili seasoning mix (can use homemade or the small store-bought packages, use as much as desired)
    shredded cheddar cheese (to taste)
    sour cream
    onions

    In a large saucepan or Dutch oven, cook the beef with onions, garlic jalapeno (if using) salt and pepper until the onion is tender; drain any fat.
    Stir in tomato juice, salsa, beans, undrained tomatoes, undiluted soup and the chili seasoning mix; mix well to combine and bring to a boil, reduce heat and simmer for about 1 hour, if you are in a hurry (or you can simmer it for 3 or more hours!).
    Even better made a day ahead.
