    Adapted from Remembering Bill Neal. Moreton Neal said that her family
    used to make this every couple of weeks at home.

    List of Ingredients




    Olive oil

    1 1/2 pounds ground chuck or round

    3/4 pound beef chuck or round, cut into 1-inch cubes

    1 large onion, chopped

    1 large green bell pepper, chopped

    2 to 3 stalks celery, chopped

    2 large cloves of garlic, peeled and chopped

    1 large (48-ounce) can V-8 juice

    2 tablespoons chili powder

    1/2 teaspoon cumin

    1/4 teaspoon cinnamon

    Salt and pepper to taste

    Optional accompaniments: rice, grated Cheddar or queso fresco, sour
    cream, chopped cilantro, chopped green onions, hot-pepper sauce

    Recipe



    1. Heat a thin film of olive oil in large Dutch oven. Add meat and
    brown. Drain excess fat. Add onion, bell pepper, celery and garlic; cook
    until slightly softened. Add V-8 juice, chili powder, cumin, cinnamon
    and salt and pepper. Simmer, stirring occasionally, for 1 hour or until
    chili thickens. Taste and adjust seasonings as needed. Serve with
    accompaniments as desired.

    Makes 8 servings.
