    Frank's "Big News" Chili

    List of Ingredients




    2 tablespoons Olive Oil
    2 tablespoons chopped garlic
    1 large sweet onion
    1 large red bell pepper
    1 small green bell pepper
    1 small yellow bell pepper
    4 15-ounce cans beans (dark kidney, light kidney, black, blackeye peas)
    4 14-ounce cans diced tomatoes
    1-2 packages "YVES" veggie ground round Italian flavor (available at Earth Fare)
    2 tablespoons chili powder
    2 tablespoons brown sugar
    2 whole bay leaves
    salt and pepper to taste

    Recipe



    -Dice onion and peppers...saute with garlic and oil in large sauce pan.. on low heat for about 10 minutes.
    -Drain beans and add to pan
    -Next add tomatoes (including all the juice)
    -Crumble in veggie ground round (it's already cooked, just thaw)
    -add chili powder, brown sugar and bay leaves
    Cover and continue cooking on low heat for about an hour
    -Stir and taste periodically... salt and pepper to taste, as you go

    SPECIAL NOTES:
    -I like to use various beans in the same pot, simply because it makes the chili look more interesting. Feel free to stick with just one type.
    -There are lots of flavored diced tomatoes available. I prefer the ones with green chilis added.
    -I keep some extra tomato juice handy, just in case I have to thin the mix a little
    -It's great to serve this dish with crusty baguettes for dipping. It's also good to add a dollop of low-fat sour cream and some grated 2% sharp cheddar to each bowl.
    -And if extra spicy is what you're after, a little "Texas Pete" hot sauce makes it perfect
