    3-4 lbs of ground beef (what ever is on sale...)
    1 large sweet onion, chopped (any onion will due, but I only use sweet ones...)
    2-3 stalks celery, sliced (only if I have any in the house...my mom used it...)
    1 28oz. can diced or crushed tomatoes (I used crushed)
    1 12oz. can tomato paste
    1 15 oz. can tomato puree
    1 15.5 oz. can Lt. red kidney beans, drained and rinsed (optional...and if you like beans, add another can)
    1 TBS Sweet basil
    garlic...optional. I have a jar w/ the minced garlic in the fridge...I usually add a small tsp if I think about it.
    1/2 cup sugar (we like it sweet here...you can use brown sugar, or none at all)
    1-2 tsp ground cumin
    2-3 TBS chili powder (I had a new can once and used 3 TBS and it was SOOOO hot! So if your spices are old use 3...if you like it hot, adjust the amounts...)
    1 tsp each salt and pepper

    In a large soup pot, over medium heat, brown the ground beef and onion. Stir a lot so it doesn't stick to the bottom. Stay on the low side of the heat if you aren't able to baby-sit it. After the meat is browned, drain off the juice (my mom never did, but I try to be a little healthy sometimes). I just use a colander then dump the meat back into the soup pan.

    Add all your spices and sugar to the meat. I usually have these all pre-measured and in a bowl, but there is no problem in just going down the list and adding them one at a time. Stir well, then, add all the canned tomato stuff and beans.

    Once it starts to bubble a little, I turn the heat way down to low or simmer, cover and let simmer. We have eaten this right away, but it's better if its simmered at least an hour. We like it sweet and not too spicy. I use 1 TBS of chili powder, then, put canned chilies or the chili powder on the table. DH adds to his bowl...I put shredded cheddar cheese on top, and sometimes, chopped onions...up to you....

    I have also served this over pasta...Cincinnati style...DH like it over potatoes...Its always better the next day....

    Another option....brown the meat and onion, then put everything in a 5 qt crock-pot. Stir to mix, then cook on low 8 hours or so....
