    2 tbsp. olive oil
    1/2 cup chopped yellow onion
    1/2 cup chopped green bell pepper
    1/2 cup chopped red bell pepper
    1 tbsp. chopped Anaheim pepper
    1.5 tbsp. chopped Chipolte pepper
    1/2 cup diced carrots
    1.5 tsp. minced garlic
    2 cans black beans, drained
    1 cup frozen or canned corn, drained
    1 cup diced tomatoes
    1 cup tomato sauce
    1 tbsp. chili powder
    1/4 tsp. cayenne chili powder
    1/4 tsp. ground coriander
    1.5 tbsp. salt
    1/4 tsp. ground cumin

    Recipe



    Heat oil over medium heat in large saucepan. Saute onion, peppers, carrots & garlic in oil for 4 minutes, stirring frequently. Add remaining ingredients. Simmer for 20 minutes, stirring occasionally.
