    1 large onion, chopped
    3 or more cloves of garlic, smashed
    1 large eggplant, peeled and cubed
    1 medium green pepper, cut into 1 inch dice
    1 medium red pepper, cut into 1 inch dice
    1 medium jalepeno, sliced into rounds
    1 large or 2 small zucchini, sliced
    1 large or 2 small yellow squash, sliced
    1 large carrot, sliced
    1 large can of whole plum tomatoes
    2 cans Del Monte tomato sauce
    2 tsp. oregano
    3 tbp. fresh ground chili powder
    2 tbp. cumin
    salt, fresh ground black pepper, hot pepper sauce to taste
    Half pound fresh black beans

    In a large pot, heat some oil over medium hear and saute the onion and garlic until the onion is translucent. add the rest of the vegetables one at a time until they start to change color stirring often. After the carrots have been added add the tomatoes and tomato sauce rinsing the cans and adding that water to the pot. add the spices slowly. Add half of the chili and cumin, salt and pepper. Simmer, partially covered for a hour. Taste and adjust spices. Then simmer at least another 30 minutes.

    To cook beans, cover with water in a pot, boil for 2 minutes, then remove from heat and let soak for an hour. Then drain, again cover with water and simmer for an hour or until cooked, add water if necessary.

    Drain then add the beans to the chili for the last 15 minutes of cooking. serve over rice with grated cheddar or jack cheese and tortilla chips.
