    3 pounds lean fat-trimmed beef bottom round, cubed
    1 medium onion, chopped
    1 can (8 ounces) plain tomato sauce water
    3 jalapeno peppers
    4 tablespoons chili powder, divided use
    3 tablespoons ground cumin, divided use
    1 teaspoon garlic powder
    1 teaspoon paprika
    1 teaspoon black pepper
    1/2 teaspoon dried oregano
    1/2 cayenne pepper

    In a large pot put meat, onion and tomato sauce, adding enough
    water to cover ingredients.

    Wash and prick jalapenos and drop them in whole. Add 1 tablespoon
    each chili powder and cumin. Cover and simmer about 2 to 2 1/2
    hours until meat is tender. Remove jalapenos and mash through
    strainer. Discard pulp and add juice to meat mixture. Put all
    remaining spices in covered cup or bowl and shake to mix. Put
    half of the spice mixture in pot 30 minutes before chili is done.
    Add remaining spices about 15 minutes before chili is done.
    Serve at once. Makes 12 servings.
