    List of Ingredients




    5 medium large ox tail bones, cracked
    1 pound of ground beef
    1 pound of ground pork
    1 pound of ground beef sirloin
    1 pound of smoked maple pork ground sausage
    1 pound of beef sirloin, sliced in tiny cubes
    4 48-ounce cans of peeled tomatoes, quartered
    1 small can of tomato paste
    1 pound of ripe tomatoes, quartered
    1 4-ounce bottle of Liquid Hickory Smoke
    1 14-ounce bottle of Heinz Ketchup
    1 punch of Italian parsley, chopped fine
    1 punch of cilantro, chopped fine
    4 6-ounce bottles of McCormick Chili Powder
    2 cups of red kidney beans
    2 cups of light red kidney beans
    3 cups of dark red kidney beans
    3 cups small field peas with string beans
    2 cups of large black beans
    1 cup of sugar
    1/2 cup of flour
    128 ounces cans of beef broth
    128 ounces cans of chicken broth
    3 medium-large onions, diced
    5 large spoonfuls of minced garlic
    1 tablespoon of cayenne pepper
    1 tablespoon of paprika
    Salt and pepper

    Recipe



    Add all beans into large bowl, cover with water. Set aside for 3 hours or until tender to touch.

    Salt and pepper ox tails. Place cracked ox tail bones in large oven dish and bake in oven at 475 degrees for 30 minutes. Remove from oven, and add ground beef, ground pork, ground sirloin, grounded sausage and beef sirloin cubes. Sprinkle 1 can of chili powder all over meat and mix into meat. Place back in oven for 45 minutes at 375 degrees. Broil on high for last 5 minutes.

    In the meantime, in 300 gallon stock pot :) add beef broth and chicken stock. Add onions, cayenne pepper, paprika, salt and pepper, bring to boil then simmer. Add entire bottle of hickory smoke.

    Add cans of tomatoes, tomato paste, quartered tomatoes, ketchup, parsley, cilantro, 2 bottles chili powder and garlic. Simmer until ready for meat mixture.

    Add sugar and flour together and set aside.

    Take beef out of oven and remove meat mixture onto a large dish. Let cool and take off ox tail meat from bones. Remove bones and give to family dog. Drain fat away from meat. Mix in sugar and flour mixture into meat mixture, breaking apart all clumps of beef and pork.

    Add meat mixture into stock pot and bring to boil. Simmer covered for 15 minutes.

    Add all beans into stock pot. Bring to boil again then simmer for at least 2 hours. Add water if needed. Add salt & pepper and remaining chili powder if needed.

    Serves a small Army
