1 pound ground pork
1 small onion, chopped
1/2 red or green pepper, seeded and chopped
1 large or 2 small pieces celery, chopped
1 or 2 cloves garlic, chopped
2 28-ounce cans crushed tomatoes
1/3 cup ketchup
1/4 teaspoon crushed red pepper
1 packet chili mix spices
1 teaspoon chili powder
1 small can, jar or meat-market pint of sauerkraut, drained
1 small can kidney beans, rinsed and drained Recipe
Brown pork slowly in a large pot, stirring often and breaking into small pieces. When meat is no longer red and fat has begun to cook out, add onions, celery and garlic. Cover pot and continue to cook slowly, stirring often until onion and celery are soft and transparent. Add tomatoes, ketchup, red pepper, chili mix, chili powder, and sauerkraut and cook, covered, on low until flavors blend, about 45 minutes to 1 hour. Stir often. Makes 4 to 6 servings.
