1/4 c. oil
2 cloves garlic, diced
1 onion, diced
1/2 c. jalapeno peppers, diced
3 tbsp. cayenne pepper
2 lg. cans tomato puree
2 lg. cans tomato sauce
1 lg. can whole tomatoes, hand crushed
1 c. fresh mushrooms
2 lb. chopped veal
1 tbsp. parsley flakes
2 cans red kidney beans
Salt and pepper to taste
1 tsp. basil leafRecipe
In a large skillet, add all vegetables (not beans) to oil and saute until garlic browns and add veal and brown meat.
In a large pot, add sauce, puree, whole tomatoes, on low flame. Add all seasonings, then add meat and vegetables. Cook over low flame for 3 to 3 1/2 hours. You may want hotter chili so add peppers and cayenne pepper to your liking. Serve over white rice.
