    1 pound lean ground beef

    1 tablespoon olive oil

    1 onion, chopped

    1 sweet red bell pepper, seeded and chopped

    1 can (28 ounces) cut-up tomatoes

    1 can (14 ounces) cut-up tomatoes

    2 cloves garlic, finely chopped

    1 can (15 ounces) black beans

    1 can (15 ounces) kidney beans

    1 can (6 ounces) tomato paste

    2 tablespoons ground cumin

    1 tablespoon chili powder

    1 teaspoon kosher salt

    12 ounces beer, Negra Modello preferred

    2 tablespoons chopped chipotle pepper in adobo sauce, or more to taste

    1 tablespoon dark brown sugar, or more to taste

    1. Place ground beef, oil, onion and sweet red bell pepper into a 5-quart Dutch oven or stock pot; cook and stir slowly over medium-low heat until meat is no longer pink and onion is soft and clear but not browned, about 10-12 minutes.

    2. Stir in both cans of cut-up tomatoes, garlic, black and kidney beans, tomato paste, cumin, chili powder, salt, beer, chipotle pepper and brown sugar. Bring just to a boil and immediately reduce heat to a slow simmer. Cook partially covered about 2 hours. Taste and adjust seasonings with more chipotle pepper or more sugar or salt to taste.
