Nancy Welch's Super Bowl Chili

4 large onions, chopped
4 cloves garlic, minced
Ð cup peanut oil
3 28-ounce cans Italian plum tomatoes
2 28-ounce cans tomato puree
2 teaspoons oregano
1 teaspoon crushed red pepper
1 tablespoon salt
1½ tablespoons basil
Ð cup chili powder
2 tablespoons cumin
2 pounds smoked sausage or Italian smoked sausage
5 pounds lean ground chuck
4 15-ounce cans red kidney beans, drainedRecipe
1. Saute onion and garlic in the peanut oil over medium heat.
2. Stir in the tomatoes, tomato puree, and herbs and spices and simmer while cooking the meats.
3. Cut the sausage into ½-inch pieces and brown. Drain and add to the mixture.
4. Brown the chuck in small batches. Drain and add to the mixture.
5. Simmer for 1 hour.
6. Add the beans.
Makes 18 to 20 servings.
