    No Beans in my Chili, Silly!

    4 lbs. beef chuck, ground course
    1 or 2 yellow onions, chopped
    1 head of garlic, peeled and chopped
    1 ½ cups of good salsa ( Tomatillo's chipotle)
    ½ cup ground ancho chiles
    2 tablespoons Southwest chili powder (Frontier)
    4 tablespoons Dried oregano
    2 tablespoons Mr. Gene Greens Zydeco mustard
    4 teaspoons Paprika
    ¼ teaspoon Cayenne
    salt to taste
    2 tablespoons Corn meal

    Recipe



    Heat heavy pot mid-high til hot, add beef, cook to no longer pink. (5 -10 minutes) Add garlic, salsa, chiles, and other spices and enough water to cover meat. (4 -5 cups) Mix corn meal with 1/3 cup warm water til smooth, add to chili and stir well. Continue cooking med/low heat til meat is very tender and sauce has thickened. (30 minutes)
    Adjust spices. Enjoy. Serve over tortilla chips or fritos.
