    List of Ingredients




    1 1/4# beef tenderloin chain trim, cubed 1/2 inch
    2 C. Roma tomatoes, diced
    1 C. crushed tomatoes
    1/2 C. Green Chili peppers, diced
    1/2 C. Roasted Yellow Bell Pepper, julliened
    1/2 Large yellow onion, sliced thin
    1 1/2 C. Black Beans
    1 C. Veal Stock
    1 T. Chipotle pepper powder
    1 T. Smoked Paprika
    1 T. Cumin (fresh seeds, toasted then ground)
    2 T. Roasted garlic, minced
    1/2 T. salt
    1/2 T. Five Spice powder
    1 T. sugar
    1/4 C. butter

    Recipe



    Melt butter in a saute pan over low heat and add onions. Saute until onions are well caramelized. About 15 minutes. Remove from heat and reserve.

    In a sauce pan heat a small amount of olive oil over high heat. Add beef and sear on all sides. Five minutes.

    Add green chili peppers and fresh tomatoes. Cook for 2 minutes, stirring frequently.

    Add the stock and deglaze. Bring to a boil and turn down to a high simmer. Add crushed tomatoes. Simmer for 10 minutes.

    Add the chipotle powder, smoked paprika, garlic, cumin, salt, five spice powder and sugar. Simmer 10 more minutes.

    Add black beans and cook five minutes.

    Add yellow peppers and the reserved onions. Cook additional 10 minutes. Taste and adjust seasonings. Serve.
