List of Ingredients
3 lbs. sliced beef knuckle (steak meat)
1 cup seeded and diced peppers
1 cup onion, peeled and diced
2 cups diced tomatoes in puree
3/4 cup tomato paste
8 ozs. beer (not light)
1/2 cup V-8 juice or tomato juice
14 ozs. ketchup
2 cloves garlic, chopped
1 Tbsp. chili powder
11/2 Tbsps. cumin
11/2 tsps. white pepper
2 Tbsps. paprika
1/2 Tbsp. oregano
2 to 3 chipotle peppers
1 Tbsp. Tabasco sauce
Recipe
Place beef, peppers and onions in a large heavy pot and saute till meat is browned. Add garlic, then the rest of the liquid ingredients plus half of the dried spices. Bring to a slow boil, reduce heat to a simmer. Add remaining spices (reserving a small amount for the final tasting), simmer for 1 hour, stirring often. Garnish with melted cheese sauce (Cheez Whiz?) and banana pepper rings.
