    1 ½ pounds chicken breast (boneless skinless) ½-inch cubes

    1 onion diced or chopped

    2 garlic cloves diced

    1 teaspoon cumin (ground)

    ½ teaspoon marjoram

    ½ teaspoon oregano

    ¼ teaspoon cayenne pepper (optional)

    15-ounce can garbanzo beans (½ puree in bean juice)

    14 ½-ounce can chicken broth

    15-ounce can navy beans

    16-ounce can white kernel corn

    2 jalapenos minced (or) 4 ounces diced green chiles (drained)

    19-ounce can cannellini beans

    Recipe



    Heat a heavy soup pot or use skillet and slow cooker. Add ½ tablespoon oil and sauté chicken and remove. Sauté onion and garlic 3-5 minutes, add spices. Add chicken and other ingredients except cannellini beans, simmer 30 minutes. Add cannellini beans. Simmer 10 minutes.

    Serve. Garnish with 8 ounces Monterey Jack cheese and chopped parsley.
