    1-2# pork tenderloin
    3 small cans diced green chilis
    1 can Rotel tomatoes
    1 14 oz can diced tomatoes
    1/2 small can red jalapenos, diced (very hot, more or less to taste)
    available in Mexican markets
    1 t cumin
    3 cans Joan of Arc Spicy Chili Beans (not hot) or Brooks
    1 med to large onion, diced
    1-2 large cloves garlic, minced
    red pepper flakes to taste
    1-2 C water
    Oil spray or 1 Tabl. veg. oil.

    Recipe



    Spray bottom of deep pan with oil spray.
    Cut pork tenderloin into bite sized cubes.
    Brown over medium heat until no longer pink
    Add onion and garlic and cook until softened, about 5 minutes. Add cumin
    (careful of the fumes)
    Add green chilis, chili beans, tomatoes w/ jalapenos. Stir and combine,
    Add water.
    Simmer several hours or put into a crockpot for several hours.
    Serve with warm flour tortillas, torn or rolled for dipping or your
    favorite tortilla chips.

    * with this particular recipe I think it is critical to use the specific
    brands mentioned above.
