    3-4 large tennis-ball sized onions, chopped
    4 Tbs. olive oil or corn oil
    5 lbs. lean ground beef
    1 lb. high quality pork sausage
    5 (16-oz) cnas tomatoes or 5 lbs. fresh tomatoes chopped
    1 (12-oz) can tomato sauce
    1 cup red wine
    1 bulb fresh garlic, minced
    5 fresh Jalapenos, seeded and chopped
    2 yellow bell peppers, seeded and chopped
    2 red bel peppers, seeded and chopped
    1/2 cup fresh parsley, chopped
    1/2 cup fresh oregano leaves, chopped or 2 Tbs. dried oregano
    1/2 cup fresh basil leaves, chopped
    2 Tbs. ground cumin
    2 Tbs. chili powder
    2 Tbs. salt
    1 Tbs. black pepper
    2 Tbs. cornmeal (or masa harina) mixed until smooth, with 3/4 cup water

    Heat oil in large Dutch oven. Add onions and cook over medium heat until translucent, without browning. Remove to a small bowl with a slotted spoon. Crumble ground beef and sausage into Dutch oven and brown over medium-high heat, stirring frequently. Spoon away excess fat. Add remaining ingredients. Stir well to combine. Simmer uncovered for 1 hour, stirring occasionally. Add cornmeal/water mixture and stir to blend well. Simmer for an additional 15 minutes. Season to taste. Serve over rice. Tasty toppings for this dish include onions, cheese, sour cream, picante sauce or pico de gallo. Sides of black beans or pinto beans and a salad and hot crusty bread make an excellent meal.
    Serves 16-20.
