WHITE SURPRISE CHICKEN CHILI

1 pound great Northern beans
6 cups water
6 cups chicken broth
1 large onion, chopped (1 cup)
2 cloves garlic, minced
2 4-ounce cans diced green chili peppers
1 tablespoon dried oregano, crushed
1 tablespoon ground cumin
1/2 teaspoon ground red pepper
4 cups chopped, cooked chicken
1/2 cup shredded Monterey Jack cheese
Fresh chili peppers (optional)

Rinse beans. Place in a Dutch oven and add water. Bring to boiling. Reduce heat; simmer, uncovered, for 2 minutes. Remove from heat. Cover and let beans soak for 1 hour. (Or cover and soak beans overnight). Drain off water.
In same Dutch oven, combine beans, broth, onion, garlic, chilies, oregano, cumin, red pepper, 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to boiling. Reduce heat. Cover and simmer 1 hour.
Stir in the chicken. Simmer, covered, for 1/2 to 1 hour more. Before serving, stir in the cheese until just melted. Serve with sliced chili peppers or additional cheese. Makes 5 to 6 servings.
