    2 tablespoons vegetable oil or use non-stick spray
    3 pounds coarsely ground beef chuck, lean only, divided
    1/4 cup instant minced onion
    1/3 cup chili powder
    2 tablespoons ground cumin
    1 tablespoon paprika
    1 teaspoon dried oregano leaves
    1 teaspoon garlic powder
    1/2 teaspoon salt
    1/8 teaspoon dried marjoram
    1/8 dried thyme
    1/8 teaspoon rubbed sage
    2 cups fat-skimmed chicken broth
    3/4 cup beer
    1 can (8 ounces) plain tomato suace
    1/4 teaspoon ground black pepper
    optional: 1 1/2 teaspoons granulated sugar

    In Dutch oven or large sauce pot, heat oil over medium heat, or
    coat liberally with non-stick spray. Add 1/3 of the beef and cook and
    stir just until it loses its pink color. With slotted spoon transfer
    to a bowl. Repeat with remaining meat. Return meat and accumulated
    juices to the pot. Add onion, chili, cumin, paprika, oregano, garlic,
    salt if desired, marjoram, thyme, sage, broth, beer and tomato
    sauce. Bring to a boil, reduce heat, partially cover and simmer for 1
    1/2 hours, stirring occasionally. Add sugar if desired and black
    pepper. Ladle into bowls and serve with dollop of sour cream, if
    desired or substitute with plain low-fat yogurt). Makes 12 servings.
