    2 lb. Ground Beef
    2 lb. Sirloin Steak, cubed
    1 large Yellow Onion, chopped
    1large Green Pepper, chopped
    1 29 oz. can Tomato Sauce
    1 29 oz. can Crushed Tomatoes
    1 11.5 oz. can Tomato Juice
    1 11.5 oz. can Spicy V-8 Juice
    2 pkg. McCormick's Mild Chili Mix
    2 tbsp. Chili Powder
    1 4 oz. can Green Chilies, chopped
    1/4 cup Parmesan Cheese
    10-15 Cherry Tomatoes (halved)
    8 oz. Shredded Cheddar Cheese

    This dish is best when prepared in a cast iron Dutch oven, just like they use to do out on the range! Brown ground beef, cubed stew beef over medium high heat. When meat is about half done, add chopped onion, green pepper to the mixture. Once meat is thoroughly cooked, reduce heat to a medium flame and gradually add remaining ingredients (hold back on the cherry tomatoes and cheese) starting w/ crushed tomatoes, tomato juice, tomato sauce, spices, etc... Allow this mixture to simmer for approximately 2 hour. Once the 2 hour has elapsed, check the consistency/thickness of the chili... if a thicker chili is desired, try adding a cup of flavored croutons (crushed) or Italian breadcrumbs to the chili. This will thicken and add flavor... 5 minutes before serving, add cherry tomatoes and parmesan cheese to hot chili. Serve garnished with chopped onion and shredded cheddar cheese.
