    List of Ingredients




    1 pound ground bison
    1 cup finely diced yellow onions
    1 teaspoon ground red (cayenne) pepper
    2 tablespoons diced celery
    1/3 cup diced red bell pepper
    1 cup canned, diced tomatoes, undrained
    1/2 cup canned chili beans
    1/2 cup canned black beans
    1/2 cup canned, kidney beans
    1 cup tomato juice
    1 1/2 tablespoons chili powder
    1 teaspoon ground cumin
    1 1/2 cups water
    1 teaspoon salt
    1/2 teaspoon ground black pepper

    Recipe



    Brown the bison in a large skillet over medium heat; drain any fat. Add onions, cayenne, celery and bell pepper. Cook 10 minutes, stirring occasionally. Add tomatoes, beans, tomato juice, chili powder, cumin, water, salt and pepper. Simmer for 30 minutes, stirring occasionally. Adjust seasoning to taste.

    Serves 10.
