    List of Ingredients




    3 pounds chorizo picante (hot sausage)
    5 pounds ground sirloin or lean beef
    2 large white onions
    8 cloves garlic
    Oregano, salt, pepper to taste
    3 large poblano chiles for color
    3 jumbo red peppers
    10 green chiles
    1 6-ounce bag dried New Mexico chiles
    3 cans chicken broth

    Recipe



    1. Roast the poblanos, green chiles and red peppers, then peel off the skin, seed and chop.

    2. Soak the New Mexico chiles (after cutting off tops and shaking out seeds) in hot water for one hour. Split open and scrape meat off skin.

    3. Saute the chorizo, onions and garlic. When onions are opaque, add beef.

    4. Puree green chiles and New Mexico chiles in blender, then add to meat.

    5. Add chopped peppers.

    6. Add broth and bring to quick boil, then simmer.
