    1 tablespoon butter

    4 cups chopped onion, about 1 pound

    3 cloves garlic

    3 pounds ground beef

    7 to 8 cups kidney beans (about five 15-ounce cans)

    3 cans condensed tomato soup

    2 (14-ounce) cans diced tomatoes, with juices

    3 tablespoons flour

    9 tablespoons water

    3 teaspoons sugar

    2 1/2 tablespoons chili powder

    2 1/2 tablespoons ground cumin

    1 tablespoon cayenne pepper

    Recipe



    Melt the butter in a large pot or stockpot. Add the onions, garlic and ground beef, cooking until beef is browned.

    Add the beans, tomato soup and diced tomatoes. Cook for 10 minutes over medium heat.

    In a medium-size bowl, mix the remaining ingredients. If the mixture is too thick, add a little water. (Do not add the beef to the mixture if it is pasty, dumplings will form. The mixture should have a light creamy consistency.)

    Add the mixture to the chili, simmer on low for 1 hour, stirring frequently.

    Serve with shredded Cheddar cheese, crackers or sour cream. Makes 12 to 15 servings.
