    Simple and elegant, this dish present spicily marianted and quickly sautéed shrimp - an idea borrowed from the Cajun kitchen - atop a bowl of moderately spiced white beans with chiles.

    List of Ingredients




    * 3/4 pound dried Great Northern beans
    * 6 tablespoons olive oil
    * 4 fresh green Anaheim chiles, stemmed, coarsely chopped with seeds
    * 2 fresh red serrano chiles, stemmed, seeded and coarsely chopped
    * 1 fresh jalapeño chile, stemmed, seeded and coarsely chopped
    * 2 medium sized garlic cloves, finely chopped
    * 1 medium sized onion, finely chopped
    * 4 cups fish broth
    * ½ pound tomatillos, coarsely chopped
    * 1 teaspoon dried leaf oregano
    * ½ tablespoon dried leaf basil
    * 1 teaspoon dried leaf thyme
    * 1 bay leaf
    * ½ teaspoon white pepper
    * ¼ cup unsalted butter, melted
    * 1 tablespoon medium-hot pure chile powder
    * 1 tablespoon sweet paprika
    * 1½ pounds medium-size fresh shrimp, shelled and de-veined
    * ½ cup chopped fresh cilantro, for garnish

    Recipe



    1. In a large saucepan, cover beans with cold water, Bring to a boil over high heat, boil briskly 5 minutes, then remove from heat and let soak 1 hours.
    2. Drain and rinse under cold running water. Set beans aside.
    3. In saucepan, heat 4 tablespoons of the oil over medium heat. Add chilies, garlic and onion and sauté until onion is transparent, 2 to 3 minutes. Add drained beans, fish broth, tomatillos, oregano, basil, thyme, bay leaf, salt and pepper.
    4. Bring to a boil, reduce heat and simmer, covered, until beans are tender, about 1½ hours , adding a little water if necessary to keep beans barely covered.
    5. About ½ hour before beans are done, stir together half of the butter with chile powder and paprika. Rub butter mixture evenly over shrimp.
    6. When beans are done, heat remaining oil and butter over medium-high heat. When mixture just begins to smoke, add shrimp and sauté until done and slightly blackened, 1½ to 2 minutes.
    7. Discard bay leaf and serve beans in shallow soup bowls, topped with shrimp and garnished with cilantro.
