    A great cold-weather chili, this requires almost no effort to prepare. Sausage, chicken, onions, beans, and seasonings are cooked with a mix of Cajun flavored red and white beans and rice.

    List of Ingredients




    1/2 pound mild Italian sausage, casings removed


    3/4 pound skinless, boneless chicken breasts, cut into 1/2-inch pieces


    1 cup chopped yellow onion


    2 quarts water


    1 15-ounce can white beans, rinsed and drained


    1 7.4-ounce box uncle ben's red beans and rice mix


    1/2 teaspoon dried thyme leaves


    1 tablespoon chili powder


    1 teaspoon ground cumin


    1/2 teaspoon salt or to taste

    Recipe



    Place a dutch oven (preferably cast iron) over medium-high heat, add sausage, and brown. Using a slotted spoon, transfer meat to paper towels to drain. Pour off excess grease from dutch oven and add chicken. Cook for 4 minutes or until just beginning to brown, and, using a slotted spoon, transfer to a bowl. Add onion to dutch oven and cook for 4 minutes or until translucent. Add water and bring to a boil. Add white beans, rice mix, thyme, sausage, and chicken and return to a boil. Reduce heat and simmer, covered, for 25 minutes. Remove from heat, add chili powder, cumin, and salt, and let stand, uncovered, for 20 minutes. Reheat over low heat and serve.



    SUGGESTED GARNISH: Chopped pimiento or pimiento strips.



    Makes 8 - 10 cups
