    1 1/2 c chopped onions
    1 1/2 c chopped celery
    3 tb corn oil
    1/2 c diced carrots
    1 red bell pepper; seeded and
    -chopped
    1 green pepper; seeded and
    -chopped
    6 cloves garlic; minced
    2 1/2 c plus 1 cup crushed canned
    -tomatoes
    3 oil-packed sun-dried
    -tomatoes; chopped
    1 ts chili pepper flakes
    2 ts ground cumin
    3 tb chili powder
    2 ts dried oregano
    1 ts salt
    1 jalapeno peppers; minced
    -(optional),
    -- up to 2
    2 lg tomatoes; blanched, skinned
    -- and chopped
    2 c corn kernels; fresh or
    -frozen and
    -- thawed
    1 19 oz can white kidney
    -beans; drained
    Grated cheddar cheese
    Sour cream

    Recipe



    1. In a Dutch oven, saute onions and celery in oil until soft. Add
    carrots and bell pepper; cook until they begin to soften; add garlic.

    2. As garlic softens, add 21/2 cups crushed tomatoes, sun-dried
    tomatoes, red pepper flakes, cumin, chili powder, oregano and salt.

    3. If you want this chili to be spicy, add jalepeno pepper. Simmer
    over low heat 20 minutes, stirring often, adding remaining cup crushed
    tomatoes, if necessary, to keep chili moist. Add fresh tomatoes, corn
    and beans. Simmer additional 10 minutes.

    4. Serve in bowls, top with cheese and garnish with sour cream.

    Serves 6.
