    5 pounds hamburger
    2 large onions, chopped
    4 heaping tablespoons chopped jalapenos (canned or fresh)
    3 to 5 4.5-ounce cans chopped green chilies, undrained
    1 tablespoon salt
    2 teaspoons pepper
    1 tablespoon garlic powder
    1 tablespoon cumin
    5 to 6 tablespoons chili powder
    2 28-ounce cans crushed tomatoes
    2 30-ounce cans chili beans (not kidney beans), undrained

    In a very large pot, crumble hamburger into 2 quarts (8 cups) water. Add onion; mix. Bring to a boil, covered, over high heat. Cook until hamburger turns brown.

    Add jalapenos, green chilies (to taste), salt, pepper, garlic powder, cumin, chili powder and crushed tomatoes. Cover and bring to a boil again; reduce heat to medium and simmer 30 minutes, stirring often. Add chili beans. Bring to a boil again; reduce heat to a gentle simmer (low to medium-low) and cook, partly covered, 2 1/2 to 3 hours, stirring often. Liquid should be almost completely reduced. Add more water if you prefer a thin chili. Skim off fat with a large spoon, if it bothers you.

    Serves about 16.
