1 tb Lard
1 Onion
2 Garlic cloves
1 lb Beef, coarse grind
2 tb Red chili, ground, hot-mild
1 ts Celery salt
1/4 ts Cayenne pepper
1 ts Cumin
1/2 ts Basil
1 ts Salt
16 oz Tomatoes, plum
1 Bay leaves
3 c Water
1 Cinnamon stick, small
2 Whole cloves
1 Bell pepper(s)
16 oz Kidney beans
Recipe
1.
Melt the lard in a large heavy pot over medium-high heat.
Add the onion and garlic and cook until the onion is translucent.

Add the meat to the pot.
Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.

Stir in the remaining ingredients up through the cloves.
Bring to a boil, then lower the heat and simmer, uncovered, for 2 1/2 hours.
Stir occasionally.

Stir in the green pepper and kidney beans and simmer, uncovered, for 1/2 hour longer.
5.
Remove the cinnamon stick, bay leaf and, if possible, the cloves.
Taste and adjust seasonings.
