    2 1/2 lbs. ground bison, elk or venison
    1/2 lbs. pork breakfast sausage
    1 onion
    1 tablespoon cumin
    1 tablespoon seasoning salt
    3/4 teaspoon cayenne
    1 1/2 teaspoon Cajun seasoning
    1 1/2 teaspoon black pepper
    1 1/2 teaspoon minced garlic
    2, 28 oz. cans chopped tomatoes
    1 to 2 cans kidney beans
    masa flour (optional)

    Recipe



    In a large, heavy saucepan brown ground meats and onions Drain off fat. Add garlic, seasonings and tomatoes. Partially cover and simmer over low flame until meat is tender (60-90 minutes), stirring regularly. May be thickened with masa flour.

    Add drained kidney beans and simmer for 10-15 minutes longer. Serve with corn bread, crackers or tortillas. Optional additions: green bell peppers, green chiles, potatoes, corn, masa flour or chipoltes.
