    1 Tbsp. oil
    1 large onion, coarsely chopped
    3 to 4 lbs. ground turkey meat
    8 Tbsp. ground hot red chile
    2 guajillo chiles, reconstituted (seeds and stems removed)
    3 tablespoons ground cumin
    3 medium cloves garlic, crushed
    1 Tbsp. freshly ground black pepper
    1 Tbsp. salt
    1 Tbsp. sugar
    1 12-oz. can peeled whole tomatoesand diced
    4 16-oz. cans kidney beans, with liquid

    Saute the onion and chiles in a large pot. Combine the turkey with the cumin, garlic, and pepper. Add this meat-and-spice mixture to the pot. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned. Stir in the remaining ingredients. Bring to a boil, then lower the heat and simmer, uncovered, for at least 4 hours but as many as 8 if possible. Stir occasionally. Taste and adjust seasonings. Serves: 6 to 8.
