    2 or 3 (1 lb.) cans red beans
    1 (2 1/2 lb.) can tomatoes
    1 sm. can tomato juice
    3 beef bouillon cubes
    1/2 tsp. each basil, oregano, cumin & thyme
    2 tbsp. chili powder
    2 c. ripe green olives
    1-2 lbs. ground beef
    1-2 lg. onions, chopped
    1-2 green peppers, chopped (no seeds)
    2 cloves garlic, mashed
    Salt & Pepper to taste

    Place the last five ingredients in a large chili pot and bring to a boil, stirring frequently. Brown the beef in a little oil in a skillet, adding the onions, green peppers and garlic and saute with the beef, salt and pepper to taste. When the meat is fully browned, the entire contents of the skillet should be added to the chili pot. Simmer for an hour or two, stirring from time to time. Add a splash of coffee, red wine or tomato juice, as needed to keep the contents moist.
