1 lb. chili or pinto beans
2 lbs. ground beef
4 tbsp. oil
2 med. potatoes, diced
3 onions, chopped
1/3 c. rice
2 stalks celery, chopped
2 (1 lb. 12 oz.) cans tomatoes
3 garlic cloves, chopped
2 tbsp. salt
1 tsp. pepper
1/3 tsp. red or cayenne pepper
2 tbsp. chili powder
2 tbsp. flour
1/3 c. vinegarRecipe
Cook beans 2 hours. Brown meat in oil. Add potatoes, onions, rice, celery, tomatoes and garlic and cook for 1 hour. Add undrained beans, salt and pepper. Simmer one hour. Make paste of chili powder and flour. Add to meat mixture and simmer 1 hour, stirring often. Add vinegar 1/2 hour before serving. Serves 12.
