    450g/1lb pork
    2 tbsp lard
    1 tbsp flour
    6-7 green chilli peppers, de-seeded and chopped
    1 onion, chopped
    2 large potatoes, chopped
    1 tomato, chopped
    1 garlic clove, crushed
    salt

    Recipe



    1. Put the pork into a pan with 120ml/4fl oz water and cook for about 1½ hours or until tender.
    2. Leave to cool, then strain, reserving the cooking liquid.
    3. Trim off any fat from the meat and discard; shred the lean finely with your hands. In the same pan make a roux with the lard and flour, cooking it gently and stirring all the time until it browns.
    4. Add the cooking liquid from the pork, the pork itself, the chillies, onion, potatoes, tomato and garlic.
    5. Cover with cold water. Bring to the boil and simmer until the potatoes are cooked. Add salt to taste.
