Mexican Pork Chili

1-1/4 pounds boneless pork loin or shoulder, trimmed of visible fat
Vegetable cooking spray
1/4 teaspoon salt
1 medium onion, coarsely chopped
1-1/2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1-1/2 teaspoons dried oregano leaves
1 teaspoon ground cinnamon
1 teaspoon unsweetened cocoa
1 can (14-1/2 ounces) Mexican-style diced tomatoes, undrained
1 can (8-3/4 ounces) kidney beans, drained and rinsed
1 green onion, thinly sliced
Recipe
1. Cut pork into 3/-inch pieces.
2. Spray 2-quart nonstick saucepan with cooking spray; heat over medium heat until hot.
3. Add pork (1/2 at a time) and brown evenly, stirring occasionally. Pour off drippings.
4. Season pork with salt. Add onion; season with chili powder, cumin, oregano, cinnamon and cocoa, tossing to coat evenly.
5. Stir in tomatoes. Bring to a boil; reduce heat to low. Cover tightly and simmer 45 minutes.
6. Add beans; cover and continue cooking 15 minutes or until pork is tender. Garnish with green onion.
Serve immediately.
