½ c butter
2 c diced yellow onion
1/3 c fresh chopped garlic
¼ c fresh diced jalapenos
1 c diced green bell peppers
1 gallon water
3 c tomato paste
½ c beef base
1 qt whole peeled tomatoes
3 qts ranch beans
2 T oregano
1 T black pepper
3 T granulated garlic
¼ c fresh ground cumin
¾ c chili powder
5lbs sirloin, diced
2 c olive oil Recipe
Melt butter in skillet. Saute onions, bell peppers, jalapenos and garlic over medium heat. Do not brown. Mix the water, beef base, and tomato paste until thoroughly incorporated. Add mixture to skillet and reduce heat to medium and cook for 15-20 minutes until it reaches a thick gravy-like consistency. Add tomatoes, beans, oregano, pepper, garlic, cumin and chili powder to skillet mixture and cook for another 20-25 minutes. Season sirloin with salt and pepper. Heat an iron skillet with 1 cup of olive oil on high heat until smoking hot. Sear 2 pounds of sirloin at a time to medium-rare. Clean skillet with a dry towel and add fresh olive oil after each time. Place sirloin in a perforated pan to drain. Add to chili and cook on medium heat for 15 minutes.
