Spicy Mushroom and Chicken Chili

3/4 pound boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
2 cups canned tomatoes with juice
1 medium jalapeño pepper, seeded and diced (about 1 tablespoon)
1 cup canned red kidney beans, rinsed and drained
1 cup frozen corn
2 teaspoons chili powder
1 teaspoon ground cumin
2 medium garlic cloves, crushed
1/2 pound (about 3 cups) sliced mushrooms, any type
1/2 cup water
Salt and freshly ground pepperRecipe
Heat a large non-stick skillet on medium-high heat. Add chicken, tomatoes, jalapeño, beans, corn, chili powder, cumin, garlic, mushrooms and water. Bring to a simmer; reduce heat to medium-low. Simmer, uncovered, 15 minutes. Add salt and pepper to taste.
