    List of Ingredients




    1-pound pinto beans
    1-small jar small cocktail onions
    1/2-pound slab bacon (1 inch cubes)
    3/4-tsp thyme
    1 1/4-tsp toasted cumin
    4-tbsp pure chili powder
    1 1/2-cups tomato paste
    1 1/2-cups canned pear-shape Italian tomatoes
    2-tbsp liquid (from cocktail onions)
    1/4-cup vodka
    3-tbsp fresh lime juice
    1-tbsp sugar
    1-tsp salt
    1/2-tsp seasoned pepper

    Recipe



    Soak beans overnight. Drain. Add fresh water to cover. Add liquid from onions (reserving the two tablespoons). Bring to a boil and cook until just tender. Drain and set aside. Sauté bacon cubes in skillet and remove from skillet. Add small onions, thyme, cumin, chili powder, tomato paste, tomatoes and two tablespoons onion liquid in skillet and heat thoroughly. Blend with beans. Place in baking dish. Pour vodka and lime juice over all. (One vodka gimlet may be used in lieu of vodka and lime juice). Sprinkle sugar, salt and seasoned pepper on top. Place sautéed bacon cubes on mixture. Cover dish and bake one hour in preheated 350º oven. More liquid may be added.

    Serves 6 to 8.
