    TPO's Killer Kick Ass Chili

    10 lbs of good beef
    10 strips of bacon
    12 cans of Guinness Draft
    1 double handful Serrano Chili
    1 double handful dried Chili Arbol
    1 double handful Jalapeno Chili
    1 tablespoon, chili powder
    8 Habanero Chili
    3 large red onions
    2 large bulbs of garlic
    1 tablespoon Hershey's CoCoa
    3 bunched green onions
    2 bunches Cilantro
    4 cups beef stock
    4 Tablespoons of Coriander
    1/2 cup of cumin
    1 cup of freshly ground garlic
    4 Tbl spoons of freshly ground black pepper
    1 potfer
    4 tsp salt
    A couple of Bay leaves
    (optional---> 2 pounds of your favorite bean (black, pinto or small red)
    (optional---> soak in water over night if you plan to use them)
    Your favorite BBQ sauce (You ain't no way never getting the recipe for TPO's BBQ sauce...!!!)

    Open a can of Guinness, and drink about half while lighting a fire on the grill. Cook the bacon till crispy, remove and pat dry with paper towel. Pop the top on another Guinness and drink while cutting the meat into 1/2 inch cubes. Open another Guinness, and consume while chopping up the red onions and garlic. Mince onions, and garlic, saute in bacon fat. Add the Chili Powder and sear the meat in this mixture to slightly blacken it. Don't worry about actually cooking the meat, we're just goin for the seal in the flavor here... Drink the rest of the Guinness while the meat browns

    In a skillet with 1/2 inch hot oil, blacken about 1/4 of the serrano and Jalapeno chilis

    Have another Guinness and finely chop the rest of the Chili peppers (including the Habaneros) and green onions.

    Put the dried Chili Arbols in a coffee grinder or Food processor and turn into chili powder. Set aside for later.

    Have 2 or 3 more Guinnesses (Guinni ?) while adding the meat (cut up), onions, chili peppers (keep 1/2 of the green onions and cilantro set aside) garlic (roasted and fresh ground) Coriander pepper, cocoa, cumin to a large pot..... add 3 cans of Guinness and cook on medium for 30 min.

    Add the ground Arbols to season to your taste.... if necessary, add a couple more Habanero Chili peppers for more heat.

    (I have toned this down just a bit for Public consumption (I use 12 Habaneros in mine...)

    Let simmer for 4-6 hours while consuming the rest of the Guinness. Enjoy !!!!!
