    1-2 lbs of (course ground beef,venison,beef chunks) or vegetable protein crumbles (for soy eaters)
    3-4 cloves of Garlic minced
    1/2 teaspoon salt
    1 large onion sliced (so the slices are almost transparent) (no sweet onions)
    1 small can of chopped green chiles
    1/2 teaspoon ground cumin
    1/8 teaspoon cayenne pepper
    1 teaspoon oregano
    1 large stalk of celery chopped very fine
    3 teaspoon hot chili powder--Spice Islands is good
    3 16 oz. cans of pinto or red beans NEVER kidney beans !

    Using oil of your choice (about two tablespoons) add garlic until softened then brown meat. Add rest of spices, onions and celery. Cover with water. Simmer until the onions disappear. Only then, add beans with their juices. Blend entire mixture and heat slowly until bubbling. For veggie version, hold the crumbles until just before you add the beans.

    Serve with shredded Jack cheese or diced fresh chiles or diced onions.
    Makes 4 servings
