    • 1 pound dry great northern beans
    • 6 cups water
    • 6 cups chicken broth
    • 1 large onion, chopped (1 cup)
    • 2 cloves garlic, minced
    • 2 4-ounce cans diced green chili peppers
    • 1 tablespoon dried oregano, crushed
    • 1 tablespoon ground cumin
    • 1/2 teaspoon ground red pepper
    • 4 cups chopped cooked chicken
    • 1/2 cup shredded Monterey Jack cheese
    • Sliced fresh chili peppers (optional)
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper

    1. Rinse beans. Place in a Dutch oven and add water. Bring to boiling. Reduce heat; simmer, uncovered, for 2 minutes. Remove from heat. Cover and let beans soak for 1 hour. (Or cover and soak beans overnight in covered pan.) Drain off water.
    2. In same Dutch oven, combine beans, broth, onion, canned chili peppers, oregano, cumin, garlic, salt, black pepper, and red pepper. Bring to boiling; reduce heat. Cover and simmer for 1 hour.
    3. Stir in the chicken. Simmer, covered, for 30 to 60 minutes more. Before serving, stir in the cheese until just melted. Serve with fresh chili peppers or additionalcheese, if you like. Makes 5 or 6 servings.
