    List of Ingredients




    3 pounds ground wild turkey
    2 cups chopped celery
    6 medium chopped onions
    2 cloves garlic
    1/2 teaspoon cayenne pepper
    1 teaspoon marjoram
    1 teaspoon cumin
    3 teaspoons salt
    2, 16 oz cans diced tomatoes
    1/2 cup chili powder
    1 tablespoon paprika
    4 cups tomato juice
    2, 20 oz cans pinto beans, undrained

    Recipe



    In a largepot, brown the turkey. Add celery, and th enext ten ingredients in order listed. Simmer for 60 minutes. Add pinto beans, and simmer an additional 60 minutes.

    Yield: 8-10 servings

    Notes:
    1. I actually did use wild turkey, but you could substitute domestic. Turkey was a nice change of pace from the "normal" chili recipe.
    2. I added, for personal taste, a package of sliced, fresh mushrooms when I added the pinto beans.
    3. We aren't huge onion fans. I used one large onion to sub for the six medium called for.
    4. Now the fun part. As the recipe is, it is only mildly "hot". Patsy liked it, so I can tell you it is pretty mild. I added jalopena pepper slices to my bowl, plus a shot or two of tobasco. Additionally, I grated some cheddar cheese to top off the bowl.
