    * 1 (12-ounce) package butterscotch or semi-sweet chocolate or milk or white chocolate pieces/chips (see note)
    * 1 (5-ounce) can (net wt.) crisp Chow Mein noodles
    * 1 cup peanuts, salted or unsalted or dry-roasted, as desired (optional)

    Melt butterscotch or chocolate pieces/chips in the top of a double boiler over very hot, not simmering or boiling, water. Or, microwave butterscotch or chocolate pieces in a deep small glass bowl, loosely covered with wax paper, at 50 % POWER for 1 to 4 minutes, until butterscotch or chocolate turns shiny; be careful not to burn the butterscotch or chocolate. Remove the container from microwave oven and stir butterscotch or chocolate until completely melted. Butterscotch and milk or white chocolate will take about 1½ minutes.

    In a medium bowl, combine crisp Chow Mein noodles and peanuts, if desired; pour melted butterscotch or chocolate pieces over noodle/peanut mixture, coating mixture evenly and well. Drop cookie mixture by rounded teaspoonfuls on to sheets of wax paper. Allow cookies to firm. To store, transfer cookies to a sealed airtight container and place in a cool dry area.

    Note: May use reduced-fat chocolate pieces/chips, if desired. May omit butterscotch or chocolate pieces/chips. Use carob chips; however, the flavor will not be the same.

    Variations:

    * Omit peanuts; use chopped English walnuts or pecans.
    * Omit peanuts or nuts; add 1 cup coarsely chopped dried sweet dark (Bing) or golden (Rainier) cherries or dried sweetened cranberries or dark or golden seedless raisins or dates, or a combination, to cookie mixture.
